Coconut Goji Bliss Balls

Ingredients:
- 1 cup Nature's Eats Unsweetened Shredded Coconut
- ½ cup coconut oil
- 1 tablespoon coconut manna (optional)
- 1½ cups Nature's Eats Raw Cashews
- 1¼ cups hempseed
- ½ cup goji berry extract powder
- ¼ cup + 2 tablespoons goji berries
- 3 teaspoons maca powder
- 2 tablespoons raw honey
- Pinch of sea salt
Directions
- In a grinder or a Vitamix machine with the dry grinder container, grind seeds and nuts separately.
- Combine all ingredients in Vitamix machine or a food processor and blend until the dough becomes mush.
- Roll the dough into balls, 1-2 inches.
- Top the balls with Nature's Eats Shredded Coconut and ground goji berries. Place in refrigerator for 15 minutes before serving.
Even though there is not a lot of honey in these protein balls they still have the perfect amount of sweetness, and the flavor of the honey shines through when combined with the creamy cashews, hemp seeds, and goji. These protein balls taste so good it’s hard to believe that they are a super healthy food.
