Better Choice Banana Nut Pancakes

Ingredients:

  • 1 egg white
  • 18 cup canola oil
  • 1 cup low-fat buttermilk
  • 1 teaspoon baking soda
  • ¼ cup wheat germ
  • ¾ cup whole wheat flour
  • 1 small ripe banana
  • ¼ cup Nature's Eats Chopped Walnuts

Wake up happy with these buttermilk pancakes adorned with bananas and walnuts.

Directions

  1. In a small bowl, smash ripe banana with a fork. In a medium bowl, mix eggs, canola oil, and buttermilk. Add baking soda, wheat germ, and flour. Stir until well blended. Add smashed banana and chopped walnuts. Stir until combined.

  2. Heat a non-stick or lightly oiled griddle or skillet over medium heat. Drop 1/4 cup of batter onto the griddle or skillet for each pancake. Flip pancake when lightly brown on one side and small bubbles can be seen on the uncooked side. Continue cooking until brown on both sides.

Serve with your favorite pancake toppings such as butter, syrup, or even peanut butter.
